Every year, Tudela celebrates the city's gastronomy, especially its vegetables.

It couldn't be any less: Vegetables, Festivals, and together, the Exaltation of Vegetables, the celebration of our essence.

Each year in Tudela, the Order of Volatín celebrates its occasion with Vegetables by organizing the tribute and, therefore, the exaltation that this product deserves, with the essential support and collaboration of the Government of Navarre and the Tudela City Council.

This celebration dates back to the 1980s with what was then known as Vegetable Week; the program of events begins in March and ends at the end of June, with the main events taking place during the first week of May.

Its dissemination is national and international through the occasional presentations and the live broadcast of radio programs from the events.

Gastronomic tours, with special menus and vegetable pinchos from Tudela, new recipe competitions, technical workshops, school competitions, cooking classes, food samples, and tastings, make up an attractive and comprehensive program, culminating in the first week of May with roundtable discussions, the Vegetable Proclamation, the awards ceremony, the General Chapter of the Order of Volatín, and the vegetable festival itself, with participation and tastings.

Journalists, restaurateurs, and other prominent figures have delivered the Vegetable Proclamation, including Luis del Olmo, Ramón Sánchez Ocaña, Cristino Alvarez (Caius Apicius), Pedro Subijana, and others.
