Protected by the Protected Geographical Indication (PGI) since 1986, it is ivory-white in color, with little or no fibrousness and a mild, balanced flavor that distinguishes it, thanks to the climate in which it is grown, with cool nights, and the quality of the water that irrigates it.
It is consumed fresh from late March to June; the rest of the year, it is found preserved.
