A dish that combines cooked borage, steamed cockles, and a soft potato foam, emulsified with cream and oil, with a touch of liquefied cockles.

Clean the borage with a skewer, removing any lint and being careful not to break the fibers. Wash thoroughly under running water. Place a pot with enough water to cover the borage. Once it reaches a full boil, let it simmer for 3 minutes. Turn off the heat, cover, and let it sit for another 3 minutes.
For the foam:
Peel, cut, and boil the potatoes with water and salt.
Once cooked, drain and reserve the cooking water.
Place the cooked potato and the cooking water in the Thermomix at 60°C. Blend, gradually adding the cream. Follow the same procedure with the oil until you get a smooth, even emulsion. Season with salt.
Strain and fill the siphon with a funnel.
Fill the siphon and keep it in a bain-marie at approximately 70°C.
Vacuum seal with a tablespoon of water, bring a pot to a boil, place the bag of packaged cockles in it, and cook for 3 minutes. Quickly place it in an inverted water bath. Remove the cockles, recover the juice, strain, thicken with xanthan gum, and add the liquid.
